Provesta® 208

Provesta® 208 has an aged cheese flavour and is very low in sodium and free of sulfites. Rich in natural flavour peptides, amino acids, and other important flavour constituents, this yeast-based product is a non-hygroscopic powder which forms a suspension in water and oil based formulations. It is microwave stable in carbohydrate, protein, fat and aqueous systems. Provesta® 208 is manufactured by a proprietary fermentation process using only natural ingredients.

Applications

Cheese products, reduced calorie mayonnaise, salad dressings, sauces, soups, snacks, spice mixes, and baked products. Especially suited for low fat and low sodium applications. Typical usage levels range from 0.25% to 1.5% on an as consumed basis.

Benefits

Provesta® 208 intensifies the cheese flavour and contributes an aged cheese character to young cheeses and processed cheese products. Cheese solids can be reduced while retaining the distinctive cheese flavours. This product also increases salt perception, and amplifies the flavours of onion, garlic and seasoning ingredients. Heightened salt perception and accentuated flavours give food formulations higher preference without high salt content or the addition of consumer avoided flavour potentiators. Improved texture and mouthfeel are evident in many food formulations.
