Provesta® 222 is a yeast based flavour designed to
intensify the perception of cheddar and other aged cheeses in food
formulations. In many food systems, the use of Provesta® 222 results in a lower total formula cost. In low and reduced fat cheese systems, Provesta® 222 helps mask the bitter and off flavour notes that are sometimes present.
Applications
Provesta® 222 may be used in any food system that
requires enhanced cheddar or aged cheese flavour. It can be used in
cheese snack seasonings, cheese seasonings for boxed meals, cheese
analogs, sauces and cheese flavoured bakery items. Typical usage rates
are 1.0% to 2.0% on an as consumed basis.
