Provesta® 201

Provesta® 201 is a non-hydrolyzed flavour ingredient which has a clean savoury taste with a rich dairy note. Rich in natural flavour peptides, amino acids and other important flavour constituents, this yeast-based product is low in sodium and free of sulfites. Provesta® 201 is a non-hygroscopic powder which forms a suspension in water and oil based formulations. It is microwave stable in carbohydrate, protein, fat and aqueous systems. Provesta® 201 is manufactured using only natural ingredients in a proprietary fermentation process.

Applications

Snacks, soups, sauces, gravies, bakery products, and salad dressings. Especially suited for low fat applications. Usage levels range from 0.25% to 2.0% on an as consumed basis.

Provesta® 201 imparts a rich fatty, dairy, buttery note, increases the savoury flavour and heightens the flavours of vegetable, spice and seasoning ingredients. This product increases the sour cream, cheddar and butter flavours while balancing the overall flavour profile in dairy applications by masking off flavours such as casein. Chicken flavour is increased along with salt perception in many applications. Provesta® 201 is frequently used in combination with other Provesta flavour ingredients such as Provesta® 000, 305, 208 and 631. Provesta® 201 contributes a creamy texture and improves mouthfeel, especially in cheese and low fat applications. Microwave heating of Provesta® 201 increases overall flavour in aqueous systems.
