Provesta® 201 is a non-hydrolyzed flavour ingredient which
has a clean savoury taste with a rich dairy note. Rich in natural
flavour peptides, amino acids and other important flavour constituents,
this yeast-based product is low in sodium and free of sulfites. Provesta®
201 is a non-hygroscopic powder which forms a suspension in water and
oil based formulations. It is microwave stable in carbohydrate,
protein, fat and aqueous systems. Provesta® 201 is manufactured using only natural ingredients in a proprietary fermentation process.
Applications
Snacks, soups, sauces, gravies, bakery products, and salad dressings.
Especially suited for low fat applications. Usage levels range from
0.25% to 2.0% on an as consumed basis.

applications. Provesta® 201 is frequently used in combination with other Provesta flavour ingredients such as Provesta® 000, 305, 208 and 631. Provesta®
201 contributes a creamy texture and improves mouthfeel, especially in
cheese and low fat applications. Microwave heating of Provesta® 201 increases overall flavour in aqueous systems.
