Provesta® 344 is a non-hydrolysed yeast-based flavour
ingredient which has a brothy poultry flavour. Rich in natural flavour
peptides, amino acids, and other important flavor constituents, this
yeast-based product is a non-hygroscopic powder which forms a
suspension in water and oil based formulations. It is stable in frozen
and microwave applications. Provesta® 344 is manufactured by a proprietary fermentation process using only natural ingredients.
Applications
Chicken, turkey and other poultry and meat products. Soups, gravies,
sauces, snack products, marinades, rubs and seasoning mixes. Usage
levels range from 0.25% to 2.0% on an as consumed basis. Provesta® 344 does not contain animal flesh, dairy products or eggs and is therefore suitable for vegetarian products.

Provesta® 344 contributes a stewed poultry flavour,
increases salt perception, and amplifies the flavour of spices,
seasonings, and vegetable ingredients. In poultry applications, Provesta®
344 contributes an MSG mouthfeel and accentuates flavours of other
ingredients without using MSG. In low fat, low salt, frozen
applications Provesta®
344 brings out the mild white meat
notes. Retorted systems develop a darker note. Improved texture is
evident in many formulations.
