Ohly® KTDD

Ohly® KTDD is a yeast extract which is low salt and has a robust, roasted meat character. Ohly® KTDD is similar to Ohly® KTD but is darker and has more brown and roasted flavour notes. This free flowing, fine granular, yeast extract powder contains a maximum of 1.0% sodium chloride. Ohly® KTDD is produced by a carefully controlled autolytic process using only natural ingredients.

Applications

Any application where low salt and brown, roasted, scorched notes are required. Typical applications include rubs for rotisserie meats, marinades, canned meat products, au jus mixes, glazes for beef, poultry and pork, vegetarian patties and seasonings. Usage levels range from 0.1% to 0.4% on an “as consumed” basis.

Ohly® KTDD provides strong roasted notes as well as the typical benefits of autolysed yeast extract which include an increase in overall flavour and an umami effect.
