Provesta® 600 is a multifunctional food ingredient derived from primary grown food grade yeast. Provesta®
600 is designed to improve the flavour of fat reduced pourable and
spoonable salad dressings by reducing the “acid bite” of vinegar. The
addition of Provesta® 600 to any salad dressing system produces a smoother, more balanced flavour.
Applications
Fat reduced pourable and spoonable salad dressings, sauces, soups and
bakery applications. Usage levels range from 0.3% to 0.9% as consumed.
Provesta®
600 should be blended with the other dry ingredients and suspended in
the aqueous phase of a dressing system before emulsification for
optimal flavour results.
Benefits
Provesta® 600 reduces the “acid bite” or harsh flavours
in salad dressings. At low levels, its use in sauces and soups results
in a fuller body flavour and smoother mouthfeel without increasing
viscosity. Provesta® 600 enhances sour cream and mushroom flavours and can partially replace egg yolk in some formulations.
