Provesta® 604 is a primary grown Torula yeast designed to reduce lactic acid bite. Provesta® 604 is designed for cultured dairy products and creamy salad dressings. The addition of Provesta® 604 produces a smoother and more balanced flavour.
Applications
Usage levels of Provesta® 604 range from 0.3% to 0.9% of the food product as consumed. Provesta®
604 should be blended with the other dry ingredients and suspended in
the aqueous phase of a dressing system before emulsification for
optimal flavour results.
