Provesta® 033

Provesta® 033 is a unique Torula yeast autolysate designed to enhance flavour in emulsion meat products such as hot dogs, bologna and smoked sausage. Provesta® 033 is produced from a primary yeast grown in continuous fermentation. The product improves the flavour of meat products without altering the existing spice profile. Provesta® 033 can be used to eliminate monosodium glutamate in sausage formulations.

Applications

Especially suited for emulsion meat products such as sausage, salami, bratwurst, frankfurters, bologna, and reduced salt bacon and ham. Typical application rates begin at 0.5% of the total formulation. The natural flavour constituents of Porvesta® 033 are activated in the smokehouse. It is suggested that test products not be tasted until 24 hours after processing. This allows the flavour system to equilibrate and give the sensory panel a product that more closely approximates the flavour of the product that will be shipped.

Benefits

Provesta® 033 works well in low-fat meat systems for moisture binding, emulsification and MSG replacement. It also provides brothy, savoury flavour notes to foods.
