Provesta® 305 has a savoury beef broth flavour and is free of sulfites. Rich in natural flavour peptides, amino acids, and other important flavour constituents, this Torula yeast-based product is a non-hygroscopic powder which forms a suspension in water and oil based formulations. It is stable in retort and frozen applications and is microwave stable in carbohydrate, protein, fat and aqueous systems. Provesta® 305 is manufactured by a proprietary fermentation process using only natural ingredients.
Applications
Meat products, soups, gravies, sauces, snack products and seasoning mixes. Usage levels range from 0.1% to 2.0% on an as consumed basis.
Benefits
Provesta® 305 contributes a savoury beef broth flavour, increases salt perception, and amplifies spice and seasoning flavours. In some applications, Provesta® 305 contributes a flavour perception similar to MSG. Heightened salt perception and accentuated flavours give food formulations higher preference without high salt content. Microwave heating increases overall flavour, beef/meat flavour and salt perception in aqueous systems. Provesta® 305 can be used in combination with Provesta® 201 to improve the fried potato and lard flavours while rounding out the overall flavour profile. In combination with Provesta® 706 it further accentuates the spice flavours and balances the sweet/sour complex. Improved texture and mouthfeel are evident in many food formulations.
